Wine of the Week: O.T.P Napa Valley Cabernet Sauvignon 2006 February 22, 2010

If Zinfandel is traditionally considered the “workhorse” grape varietal of the California wine industry, then Cabernet Sauvignon (pronounced as Cab-air-nay So-vin-yawn) can be considered the “racehorse” grape varietal of the California wine industry.  Cabernet Sauvignon is consistently the world’s most popular red grape varietal and tends to offers explosive power and showmanship; however it can also sometimes be a little “edgy” in its youth. Cabernet Sauvignon classically found its place in Bordeaux, especially within the regions of Medoc and Graves, where it produces such world renowned wines as Chateau Margaux and Chateau Latour.  Generally, Cabernet Sauvignon can have a flavor profile of black currants, cassis, black cherry, black olives and plum.
