One of the lesser known facts about Sauvignon Blanc (Pronounced as So-veen-yawn Blanc) is that it in California, wine produced from the Sauvignon Blanc grape can also be referred to as Fumé Blanc. The term Fumé Blanc started to surface in the United Sates around 1968 as a marketing identifier designed as a reference to the French Pouilly-Fumé. When a wine producer decides to identify their Sauvignon Blanc as a Fumé Blanc, it usually has been barrel aged; however this is not a requirement.

The flavor profile of Sauvignon Blanc greatly varies depending on the environment in which it is grown. Grown in New Zealand it can have very distinctive notes of grapefruit or gooseberries. In Sancerre or Pouilly-Fume it can take on notes of lemon zest, green apples and melon with a mineral-like component. Specifically, the Windy Lane Napa Valley Sauvignon Blanc 2006 has a flavor profile that is light, clean and crisp with hints of lemon custard, ripe pears and orange blossoms. This wine pairs nicely with smoked salmon, tuna wraps, chicken Kiev and mussels in a white broth.
