Happy trails Dee!

After almost 30 years with Del Frisco’s Double Eagle Steak House, Dee Lincoln is set to leave.  “The Queen of Steak” announced her decision to the assembled staff at Del Frisco’s on Friday.  Her focus going forward is on her new “Tasting Room and Bubble Bar” at Cowboys Stadium and a new restaurant she plans to open in May.  She’ll work with her brother, Ricky Comardelle, on a placed called the Dinghy Bar & Grill, a casual dining restaurant on Lake Lewisville.  We’re told Dee will pay homage to her Louisiana roots with the new restaurant.  It was a long and successful road with Del Frisco’s, starting in the early 80’s when she first met mentor Dale Wamstad in New Orleans, and ending Friday with Dee in charge of opening all the new Del Frisco’s.  The company became a national chain that was purchased by Lone Star Funds LP, a private equity firm, that also own Lone Star Steakhouse.  The quote from Dee after the announcement was apropos, “Del Frisco’s has been an incredible journey.  However, great eras come to an end”.

Enjoy “A Tour of Northern Italy”  Wine Dinner at Nicola’s Ristorante Italiano on Thursday April 22, from 6:30 until 9.  The four-course meal with wine pairings begins with an Amuse Bouche of a Mini Phyllo Basket filled with herbed Texan goat cheese, paddle fish caviar and topped with chives. It’s paired with Montesel Prosecco N.V. The Insalata d’Anatra Curata features fresh watercress lettuce with cantaloupe “confetti,” roasted cherry tomatoes, pistachios, cured fresh duck breast and aged balsamic-blood orange vinaigrette. The wine is a Suavia Soave Classico 2008. For the Carne course, it’s Sella d’Agnello alla Grappa e Mirtilli – an Australian lamb loin served with golden zucchini flower, roasted pear, porcini mashed potatoes, Grappa and a blueberry sauce. This dish is paired with Zenato Valpolicella Ripassa 2007. For Dolci, dessert, diners will enjoy Spuma di Cioccolato Gianduja, a Gianduja chocolate mousse served with pear borsch-raspberry puree and caramelized hazelnut praline. The culinary tour of Italy finishes with a Rosa Regale N.V.
