Star chef still loves the game

Chef Stephan PylesStephan Pyles guest stars on “Wining and Dining with Jim White” this week on VOKALnow.com.  Wizened music critics used to say, “Elvis could have retired in 1957 and still been considered the ‘King'”.  But that’s just not how the great ones do it.  Take Chef Stephan Pyles, for instance.  He could have sailed off into the sunset after the success of Routh Street Cafe (or Star Canyon), and still been considered one of the greatest chefs ever.  But he has too much passion and energy to rest on his laurels.  He continues to find new horizons; ways to evolve and reinvent himself.  And, lucky for us.  That’s the reason we have Flora Street Cafe in the Dallas Arts District.  The latest “10 year plan” from Stephan, and the most sublime dining experience in Dallas.  He’s enjoying some projects as a corporate culinary consultant these days, and of course, leaves plenty of time for favorite things, travel and culinary R&D.  Join us as Stephan regales us with stories about his new adventures, and shares a few nostalgic tales from the heady, high flying, high falutin 80’s.  Gourmand Troy Dungan (beloved retired WFAA weather caster) continues as our “Guest Gourmet” and offers some really interesting neighborhood restaurant suggestions.  Tip:  if Troy and his wife Janet like it, chances are really good you will too!  Welcome to the show that introduces you to the men and women who create the flavors you love.  Catch all of our digital TV episodes on VOKAL, YouTube, and Vimeo.  Or, listen to the podcast version on VOKAL and iTunes.  And, remember.  If anybody asks you what you’re making for dinner.  Tell ’em, reservations!

Coming home, staying home

Jim and RichardRichard Chamberlain is such a Dallas-Fort Worth mainstay, you may not know that as a young, rising star chef he could have gone just about anywhere he wanted.  The popular chef and restaurateur is our guest on this week’s “Wining and Dining with Jim White” on VOKALnow.com.  Richard earned his stripes with some big time chef positions in Bel Air and Aspen.  Who knows where that auspicious beginning might have taken him?  We’re lucky that he and his wife Lisa wanted to come home to Texas.  We’ll let Richard fill-in the highlights of his illustrious career, including his choice to skip FFA (Future Farmers of America) in high school to be in FHA (Future Homemakers of America), so he could meet girls.  Not sure how many dates he got, but the classes did get him interested in cooking.  Chef Chamberlain also gives us a demonstration of a one-pan gourmet meal with his indespensible cast iron skillet in our “KISS Cooking” segment (keep it simple and straightforward).  Dotty Griffith returns as our “Guest Gourmet” giving you more, great neighborhood restaurant finds.  Join us for the digital TV program, and podcast, that introduces you to the men and women who create the flavors you love.  Catch all of our episodes on VOKAL, YouTube, Vimeo, or iTunes.  And, remember.  If anybody asks  you what you’re making for dinner….tell ’em, reservations!

Galloping “Guest Gourmet”

Michael Thomson still packs ’em in at his Cultural District restaurant years after a lot of restaurants vanish.  His upscale comfort food, or “contemporary ranch cuisine”, in a laid back setting, pleases diners for lunch, dinner, or evenings on the patio.  Michael has helped many a young chef learn the ropes through the years.  That’s why his protégées affectionately refer to him as the “Godfather of Fort Worth chefs”.  See Michael in action in our latest CBS video for “DINE! with Jim White”, and be sure to stop by sometime if you haven’t been.  Heads up:  TCU Horn Frogs spoken here.   Show up bedecked in purple and you might even get a better table! Regardless, you’re sure to find good ol’ fashioned Texas hospitality.
