Covering the “Eats Beat”
Bud Kennedy is one of America’s most talented journalists. We’re lucky he calls Dallas-Fort Worth home. He’s been a star columnist and political reporter for the Fort Worth Star-Telegram for 30 years. His wildly popular (and entertaining) “Eats Beat” column sings the praises far and wide of the Fort Worth and Tarrant County dining scene. It’s a delightful reunion for us as Bud joins me on this week’s “Wining and Dining with Jim White” on VOKALnow.com. For a decade, Bud was a part of my “KRLD Restaurant Show”. He brought us great restaurant tips almost every week. He borrowed a phrase from legendary sports writer Dan Jenkins and brought us one of the most popular features we ever presented on the radio: “The Brown Food Bowl” each Super Bowl Sunday. Mr. Jenkins surmised that the best food in Texas is “either brown or white”-meaning, of course, barbecue, chili, steaks, hamburgers, fried chicken, etc. (brown food), and mashed potatoes, gravy, and Mrs. Baird’s Bread (white food). I’m eternally grateful to Bud for suggesting the idea, and even more so that he co-hosted the “Brown Food Bowl” every year with me, live on 1080 am. Back in the day we took all your calls and suggestions for your favorite brown food. On this week’s show, we’ll talk about some of the old favorites, new favorites, and foods of many colors! Coming home, staying home
Richard Chamberlain is such a Dallas-Fort Worth mainstay, you may not know that as a young, rising star chef he could have gone just about anywhere he wanted. The popular chef and restaurateur is our guest on this week’s “Wining and Dining with Jim White” on VOKALnow.com. Richard earned his stripes with some big time chef positions in Bel Air and Aspen. Who knows where that auspicious beginning might have taken him? We’re lucky that he and his wife Lisa wanted to come home to Texas. We’ll let Richard fill-in the highlights of his illustrious career, including his choice to skip FFA (Future Farmers of America) in high school to be in FHA (Future Homemakers of America), so he could meet girls. Not sure how many dates he got, but the classes did get him interested in cooking. Michael Thomson still packs ’em in at his Cultural District restaurant years after a lot of restaurants vanish. His upscale comfort food, or “contemporary ranch cuisine”, in a laid back setting, pleases diners for lunch, dinner, or evenings on the patio. Michael has helped many a young chef learn the ropes through the years. That’s why his protégées affectionately refer to him as the “Godfather of Fort Worth chefs”.
