Coming home, staying home

Jim and RichardRichard Chamberlain is such a Dallas-Fort Worth mainstay, you may not know that as a young, rising star chef he could have gone just about anywhere he wanted.  The popular chef and restaurateur is our guest on this week’s “Wining and Dining with Jim White” on VOKALnow.com.  Richard earned his stripes with some big time chef positions in Bel Air and Aspen.  Who knows where that auspicious beginning might have taken him?  We’re lucky that he and his wife Lisa wanted to come home to Texas.  We’ll let Richard fill-in the highlights of his illustrious career, including his choice to skip FFA (Future Farmers of America) in high school to be in FHA (Future Homemakers of America), so he could meet girls.  Not sure how many dates he got, but the classes did get him interested in cooking.  Chef Chamberlain also gives us a demonstration of a one-pan gourmet meal with his indespensible cast iron skillet in our “KISS Cooking” segment (keep it simple and straightforward).  Dotty Griffith returns as our “Guest Gourmet” giving you more, great neighborhood restaurant finds.  Join us for the digital TV program, and podcast, that introduces you to the men and women who create the flavors you love.  Catch all of our episodes on VOKAL, YouTube, Vimeo, or iTunes.  And, remember.  If anybody asks  you what you’re making for dinner….tell ’em, reservations!

This week on the podcast Chef Richard Chamberlain gives us an update on the lineup of top chefs joining him at this year’s Côtes du Coeur benefiting the Dallas Chapter of the American Heart Association, and gives us a sneak peak at some new menu items he’s planning.  Richard helped create the fine dining scene in Dallas, and paved the way for chefs coming up through the culinary ranks.  Through the years he has consistently provided innovative cuisine at his signature Chamberlain’s Steak and Chop House and Chamberlain’s Fish Market Grill.  We caught up with Richard just before he was about to go on stage for a cooking demo at the Dallas Travel and Adventure Show. “Wining and Dining with Jim White” is the podcast devoted  to introducing you to the top chefs and winemakers in the world.     You can subscribe to the program on iTunes and never miss a meal…er, I mean episode!

Valentine’s Treats for the Sweet

And, you know who you are!  Valentine’s is like the Super Bowl of dining for the restaurant industry.  Expect big crowds at all the popular places.  Know that you will need a reservation, and for the best table in the really cool spots, you should have called by now.  But never fear, dear heart, because February 14th is a Monday, the window of opportunity is wider this year.  You may confidently choose a rendezvous with your dearly beloved from Thursday February 11th through Valentine’s.  You might even be so bold as to include Tuesday 2/15 if you can sell it on the basis of your “great wisdom” in wanting to “avoid the crowds” and have an intimate dinner in your favorite restaurant (go for it).  I would event submit that you will gain numerous bonus points for making a Valentine’s reservation, and then “extending the romance” by getting you and your honey tickets to the Savor Dallas Wine and Food Festival on March 18-19.  You can enjoy the major part of the DFW dining scene in one night at the International Grand Tasting.  But first things first.  Here are some Valentine’s wining and dining suggestions that we think will be helpful.
