she is preparing to open a new restaurant dedicated to her South Texas roots and home cooking.  Sounds like Roots Southern Table is the perfect name, and maybe the all-time best place to find good ole Southern fried comfort food like mama, or grandma, used to make.  Tiffany’s not ready to announce the location of the new restaurant just yet, preferring to remain in the coming soon mode.  Hear the details she can provide when you join us on this week’s “Wining and Dining with Jim White”.  Restaurant industry booster and marketer supreme Tammany Stern from BestofGuide.com joins us again as our very special “Guest Gourmet”.  Watch all of our episodes on VOKAL, YouTube or Vimeo.  Subscribe to our podcast on iTunes.  And, remember.  If anybody asks you what you’re making for dinner…tell ’em reservations!

Meaningful momentum

jimwhiteandchadhouser

Jim White and Chad Houser

Chad Houser found his passion project when he was the chef at Parigi in Dallas.  With support from his then partner, Janice Provost, and tons of hard work and a heaping helping of community support, Chad developed a restaurant that has become a model for assisting juvenile offenders.  Cafe Momentum trains and mentors these young people upon their release from the system.   Cafe Momentum is a fine dining 501C3,  that puts “his kids”, as Chad says,  into every conceivable working role in an upscale restaurant and gets them on track for a better life ahead.  Oh, by the way, the food and service are great too.  Get the Cafe Momentum story from Chef Houser and find out what’s ahead for the celebrated program on this week’s edition of “Wining and Dining with Jim White”.  Chad also shows you how to make a fabulous side dish for your Super Bowl party:  pickled jalapeños.  You’ll love ’em!  Thanks for joining us on the program devoted to introducing you to the people who make the eats and drinks you love.  You can watch or listen to all of our shows on VOKALnow.com, YouTube, Vimeo, or iTunes.  And, remember.  If anybody asks you what you’re making for dinner, tell ’em reservations!

Burger nailed.  Steak slammed.

jim white and john tesar 2John Tesar is tops with beef (and a lot of other foods, too).  It’s just that he has absolutely hit a homerun in the steak and hamburger departments with his Knife and Knife Burger concepts.  You like them, too, because they are expanding into different locations–with more planned.  And, the Top Chef favorite has other concept plans up his sleeve.  Find out what’s going on with John as he joins us on this week’s edition of “Wining and Dining with Jim White”.  He also shows you the secret to his much balyhooed Ozersky Burger on today’s show.  Watch us at VOKALnow.com, YouTube or Vimeo, or subscribe to the podcast at iTunes.  Thanks for listening and/or watching.  And, remember.  If anybody asks you what you’re making for dinner…tell ’em reservations!

Mom and pop shop

Stephen Rogers, Allison Yoder and Jim White

In the very best sense of the phrase, Allison Yoder and Stephen Rogers run a mom and pop operation for the ages.  The owners of Gemma and Sachet have carved out a very loyal and enthusiastic following for their two restaurants in a crowded and competitive DFW restaurant scene while maintaining a work-home balance and healthy upbringing for their two boys.  The culinary power couple returned to Dallas for those reasons after enjoying some high-flying recognition with Press Restaurant in Napa Valley.  They offer stories about how they’ve managed to create and maintain success while keeping their sanity on this week’s edition of “Wining and Dining with Jim White”.  It’s the program devoted to introducing you to the people who create the flavors you love.  To listen, click on our podcast here or subscribe on iTunes.  To watch, just go to VOKALnow.com, YouTube or Vimeo.  And, remember.  If anybody asks what you’re making for dinner, tell ’em reservations!

Dean of top chefs is “better than A1”

Dean and Jim

Jim White and Dean Fearing

I chuckle everytime I think about Chef Dean Fearing’s tongue in cheek description of one of his spot-on delicious, new finishing sauces: Called D1.  “It’s better than A1!” quips the legendary father of Southwestern Cuisine as he glazes a pan roasted chicken breast with the sauce (it and a campanion line of finishing sauces are available at all Central Market locations in Texas and through the Fearing’s website).  It’s a comparison that might be applied to the cuisine created by the famous and affable chef: flavors better than the standard brands; with high quality food that appeals to a wide variety of tastes without becoming mainstream mediocre.  Dean is riding high into his 12th year of operation of namesake Fearing’s in the plush Ritz-Carlton Hotel in Dallas, and is sanguine about his legacy from the Mansion on Turtle Creek years, and those heady “Gang of Five” days in the 80’s when he, Robert Del Grande, Stephan Pyles, Anne Lindsey Greer (Anne McCann), and Avner Samuel banded together to rustle up some larrapin Southwestern style grub. Check out our conversation with one of the most likeable people you’ll ever meet on the latest edition of “Wining and Dining with Jim White”.  You can also see Dean prepare the aforementioned pan roasted chicken breast when you visit the VOKAL site (“KISS Cooking-keep it simple and straightforward”).  Welcome to the program devoted to introducing you to the people behind the flavors you love.  Watch or listen on VOKALnow.com, YouTube, Vimeo, or iTunes.  And, of course, always here on WineandDineDFW.com.  And, remember. Ship-shape food and hospitality

SteveSteve DeShazo runs a tight ship.  He came by it honestly through his Navy training as a cook.  These days, though, instead of overseeing a military mess hall, he’s in charge of the program that trains chefs to prepare cuisine for fine dining rooms at El Centro’s Food and Hospitality Institute.  He joins us on “Wining and Dining with Jim White” to talk about the future of the program and to laud some of it’s celebrity chef graduates.  He’s got a very interesting story to tell, and you’ll be inspired by his dedication to making this vital program even better.  Welcome to the podcast devoted to introducing you to the men and women who create the flavors you love.  You can watch or listen to our show on VOKALnow.com, YouTube, Vimeo, or iTunes.  And, remember.  If anybody asks you what you’re making for dinner…tell ’em reservations.

Covering the “Eats Beat”

BudBud Kennedy is one of America’s most talented journalists.  We’re lucky he calls Dallas-Fort Worth home.  He’s been a star columnist and political reporter for the Fort Worth Star-Telegram for 30 years.  His wildly popular (and entertaining) “Eats Beat” column sings the praises far and wide of the Fort Worth and Tarrant County dining scene.  It’s a delightful reunion for us as Bud joins me on this week’s “Wining and Dining with Jim White” on VOKALnow.com.  For a decade, Bud was a part of my “KRLD Restaurant Show”.  He brought us great restaurant tips almost every week.  He borrowed a phrase from legendary sports writer Dan Jenkins and brought us one of the most popular features we ever presented on the radio:  “The Brown Food Bowl” each Super Bowl Sunday.  Mr. Jenkins surmised that the best food in Texas is “either brown or white”-meaning, of course, barbecue, chili, steaks, hamburgers, fried chicken, etc. (brown food), and mashed potatoes, gravy, and Mrs. Baird’s Bread (white food).  I’m eternally grateful to Bud for suggesting the idea, and even more so that he co-hosted the “Brown Food Bowl” every year with me, live on 1080 am.  Back in the day we took all your calls and suggestions for your favorite brown food.  On this week’s show, we’ll talk about some of the old favorites, new favorites, and foods of many colors!  Who knows?  It might even be the impetus that gets Bud back in the studio with me more often.  I sure hope so.  And, I hope you enjoy the show.  Watch or listen on VOKAL Media, YouTube, Vimeo, or iTunes.  And, remember.  If anybody asks you what you’re making for dinner…tell ’em reservations!
