Singin’ a sweet savory song

Jim White and Dean FearingWorld famous chef Dean Fearing is one of the friendliest people you’ll ever meet.  His heralded eponymous restaurant in The Ritz-Carlton Hotel is sublime, and doing great business.  He continues to explore and refine his elevated American cuisine.  But, if he had ventured down the road that beckoned in his youth, you might never have been greeted by him at Fearing’s or The Mansion on Turtle Creek.  Or, any other restaurant for that matter. What?!?  No Lobster Tacos?  No Tortilla Soup? No Antelope on Coriander/Smoked Pepita Pesto?  Find out what we’re talking about as Dean joins us on today’s episode of “Wining and Dining with Jim White” on VOKAL.  It’s the podcast devoted to bringing you life stories behind the men and women who create the flavors you love.  Catch all our conversations with top chefs and winemakers on VOKALnow.com and on iTunes.  And, remember.  If anybody asks you what you’re making for dinner….tell ’em, reservations!

Blythe Beck and Jim White at PInk Magnolia

Blythe Beck is in the pink with her new baby, Pink Magnolia.  She became known as the Naughty Chef , so called because of the TV show she hosted following her meteoric career ascent.  Blythe made a name for herself as a popular chef and now restaurateur.  She got a big boost working with Dean Fearing at the Mansion on Turtle Creek for 4 years, then went on to be sous chef at Hector’s on Henderson, and opening chef with rave reviews at Central 214 in the Hotel Palomar.  She also did a stint at Kitchen LTO in Trinity Groves before opening her love child in Oak Cliff.  Butter, bacon and booze is her motto.  What’s not to like?  Pink Magnolia is open for dinner Monday through Saturday and serves brunch on Saturday and Sunday.  “Wining and Dining with Jim White” is the podcast devoted to bringing you the top chefs and winemakers in the world.  You can subscribe to the podcast on iTunes and never miss an episode.  By the way, this program was made from scratch using all natural ingredients.

If anybody asks you what you’re making for dinner, tell ‘em reservations.  Thanks!

Chef Hoopla

That’s a technical term for a big event featuring lots of top-flight local chefs serving up what they do best for a good cause.  What’s not to like?  Bonne Santé, a wine and food showcase coming up on Wednesday features  Bijoux chef-owner Scott Gottlich and Chef William Koval of Lakewood Country Club  co-hosting the inaugural food and wine benefit for the National Kidney Foundation at the Westin Galleria Dallas.  Showcasing their dishes will be a talented lineup of chefs including Anthony Bombaci of Nana, Dean Fearing of Fearing’s, Bruno Davaillon of the Rosewood Mansion on Turtle Creek, Abraham Salum of Salum and Samir Dhurandhar of Nick & Sam’s Steakhouse, to name only a few.  Chefs from Fort Worth, Las Vegas and Fort Worth are also represented at the food and wine tasting for a very good cause. More information can be found at www.kidney.org.

Scattershooting while wondering what happened to my dining notes

(with a tip of the hat to the great Blackie Sherrod)

Save the Date September 16th.  Or, we could say “SAVOR” the date for our next “Dinner Club with Jim White” special event coming up Thursday September 16th.  As they say in radio, “stay tuned for more details” coming soon!

KRLD Restaurant Week is continuing through September 5th for many of the great participating restaurants.  See the participating restaurants at krld.com.  Help us hit the mark of 100,000 meals served this year to raise $700,000 to benefit the North Texas Food Bank and the Lena Pope Home.

People have asked us the date of Savor Dallas 2011.  Glad to report it will be March 18th and 19th.  Once again, we’ll be celebrating wine, food, spirits and the arts.  We will be returning to the beautiful Dallas Arts District, and the spectacular “International Grand Tasting” will once again be staged in the Sheraton Dallas Hotel.  There are some big surprises planned for our 7th Annual event.  Tickets go on sale October 1st.  See highlights and video from Texas’ largest premium wine and food festival at www.SavorDallas.com.

Best meal deal in town right now is probably the resurrected “Green Room” in Deep Ellum.  How could you beat “Feed Me” from Executive Chef Joel Harloff and BYOB?  Their liquor license is not in place yet, so for the time being, you can bring in wines you like and enjoy the cool scene, the cuisine, and a real value on your wine pairing.  Is this a great country or what?

Taste of the NFL

North Texas Dinner Series

The Taste of the NFL has an appetizing game plan for North Texas and it kicks off long before the Super Bowl ever pulls into town. With the big game coming to Dallas, North Texas chefs have teamed up to create the Taste of the NFL Dinner Series. This series of dinners will coincide with the beginning of the 2010 NFL season and run through mid-November. Proceeds from these dinners benefit the North Texas Food Bank and the Tarrant Area Food Bank.  Read on for the complete schedule.

Goodbye to Aurora

The email came today from Celeste and Avner Samuel.  “After 7 wonderful years and the impending renewal of our lease… we’ve decided that AURORA had a fabulous run but it’s time for a change.  July 31st will be our last hurrah!”  Sad news for what has been described as Dallas’ only Michelin 3-Star worthy restaurant (If Michelin rated Dallas restaurants).  Through the years Avner has remained one of our most accomplished chefs.  The classically trained chef from Israel burst onto the scene as executive chef of the Mansion on Turtle Creek in the 80’s.  His collaborations with Stephan Pyles, Dean Fearing, Robert Del Grande and Anne McCann (Anne Lindsay Greer in those days), were the “shot heard ’round the world” that created the Southwestern Cuisine movement and paved the way for many a young chef who followed in their footsteps to flourish in an upscale Texas dining environment with a mission:  showing the unique flavors of Texas cuisine and the unmistakable influences on them of fine Mexican cuisine.  Samuel is a force of nature in the kitchen.  A true artisan.  A perfectionist who does not suffer fools lightly (inside the kitchen or out).  We’re on notice to sample the ambiance and elegance of Aurora one last time (or maybe a couple) before the end of July.  The email provides some welcome Dickens-like foreshadowing by mentioning that “info on future plans” will follow. Merci, chef!

Fireworks and food.  Is this a great country or what?

The best place in town to have a cool, comfortable, 5-star meal and watch Fourth of July fireworks is at Nana in the Hilton Anatole Hotel in Dallas.  Voted by Zagat as “Best Restaurant with a View,” Nana opens for dinner on Sunday, July 4th , and Monday, July 5th , from 6:00 p.m. to 10:00 p.m. to celebrate Independence Day. In addition to its regular menu, the restaurant will offer the popular “Chef Tony’s Summer Savings Menu”, a delectable three-course prix-fixe dinner for $45. Sip on a chilled summer cocktail like a Mango Martini or signature Nana’s Perfect Rita, relax in air conditioning, and enjoy the cuisine and view from the 27th floor of the award-winning Nana. The Hilton Anatole is offering special room rates for Nana guests from July 1st thru July 5th based on availability. Please contact the restaurant at 214-761-7470 for more information and reservations.

If you’re more into the fireworks than the food, the best place in town to see the pyrotechnics is Addison’s “Kaboom Town”. The 25th anniversary of the Star Spangled Banner festivities takes place on SATURDAY July 3rd from 5 p.m. until midnight.  Activities leading up to the fireworks climax include live music and food.  The Dallas Wind Symphony (and others) provides the music.  The Cavanaugh Flight Museum presents an “Historic Warbird Flyover” from 7:15 til 8:15.  The big bang, that is “Kaboom!” starts at 9:35.  For information on hotel and food specials, plus additional information, visit this link to Town of Addison

Have a safe and happy Independence Day!
