Bella formaggio

Stephan and Paula

Good friends Stephan Pyles and Paula Lambert in the 80’s and today

Cheesemonger Paula Lambert, Dallas’ divine lady of hospitality, and celebrated owner of The Mozzarella Company is our guest on this week’s “Wining and Dining with Jim White” on VOKALnow.com.  After more than three decades, her “little factory that could” still produces creamy, delicious mozzarella cheese (and other types too), made by hand in the old world style Paula learned from masters in Italy.  In today’s episode, hear stories about how she turned her little Deep Ellum business into the go to supplier for the celebrity chefs who created Southwest Cuisine, and how they helped her decide what flavors to use.  Humor and charm are part and parcel of Paula’s personality.  Find out how she used her powers of persuasion to avert an urban landscaping plan that would have chopped down a beloved tree outside her business. Paula also takes us along on her latest adventure:  Conducting culinary journeys to Italy, and tells you how you can join her.  Enjoy a delicious conversation with Paula Lambert, on the podcast devoted to introducing you to the people who make the eats and drinks you love.  Catch all our episodes on VOKAL or iTunes.  And, remember.  If anybody asks you what you’re making for dinner…tell ’em reservations!

Cheese to please

mozz_kit_tpOnce upon a time, on a sweltering summer day, Paula Lambert planted a

sweetgum tree outside her soon to open little cheese factory in Deep Ellum, Texas.  She

loved cheese and she loved her lifestyle living in Italy.  But, when she came home, there was nothing around like either of them. So, she decided to show people how good real mozzarella can be. That’s when she opened the Mozzarella Company.  And, show them she did! Along the way, a lifetime devoted to food, wine, travel and conviviality, produced a legacy of success, acclaim and satisfaction for Paula.  Almost 33 years later, the sweetgum tree–the symbol for her company–flourishes, as does the Mozzarella Company.  Which, by the way, produces way more than mozzarella.  Her story is about friends along the way.  It’s a history of Deep Ellum and the Dallas restaurant scene, and a fascinating travelogue.  Come along with us and enjoy the ride with Paula on today’s episode.   “Wining and Dining with Jim White” is the podcast devoted to introducing you to great chefs and winemakers….oh, and cheesemakers!  You can subscribe to the program on iTunes and catch up on all 14 programs (and counting).  Bon appetito!

Chef Lidia Bastianich and the Art of Mozzarella

World-famous Italian chef and cookbook author Lidia Bastianich recently visited her good friend and renowned cheesemaker Paula Lambert at the Mozzarella Company in Dallas.  As Paula is wont to do, she got Lidia involved in a delightful hands-on session of Mozzarella making.  You’re an eyewitness to the private demonstration as Jim White’s “Have iPhone Will Travel” series takes you front and center.  Buon appetito!

There is nothing like a Dame!

Susan Auler, Fall Creek Winery

Rodgers and Hammerstein said it in song, and the Dallas Chapter of Les Dames d’Escoffier says it with great food and wine!  Their 22nd “Raiser Grazer” is coming up Sunday March 6th from 5 until 8 p.m., at Cityplace Conference Center in Dallas, 2711 North Haskell.

This year’s Grazer, “Dames in the City”, is a Who’s Who of women who have redefined a new era in wine and culinary arts. The evening will feature luminaries of the wine industry and 20 well-known women chefs and culinary professionals offering samplings of food. In addition to the cork pull, a silent auction of culinary classes, private dinners, fine wines and more will be held. Guests will also enjoy specialty cocktail bars and ‘street performers’ at the event.  The group has raised more than $1 million for deserving women. Funds raised will benefit the Dallas Chapter’s established scholarship programs and endowments at five colleges and universities in Texas for women in the food, wine and hospitality industries.  Tickets to the Les Dames Raiser Grazer are available online for $50 prior to the event, and $60 at the door. The website address is www.LDEDallas.org.

And speaking of “Who’s Who”.  Read on to see all the great participants.  Thanks, ladies!
