Sevy shares the love

Jim, Sevy, and Bud

Jim White, Jim Severson and Bud Kennedy

Someone once said “If you want to be loved, be lovable.”  In the culinary world this adage fits Jim Severson to a tee (since he loves golf).  “Sevy” as his friends call him (and I’ve never met anyone who knows him that isn’t his friend), may be the most engaging, friendly, helpful, charming, kind…..well, lovable chef there is.  There are reasons beyond great food and service why Sevy’s Grill is bustling with happy guests everyday 20 years after the restaurant opened near Preston Center.  We are delighted to welcome Sevy to “Wining and Dining with Jim White” on VOKALnow.com.  We get a health update from the popular chef and a look at what’s ahead for him.  Most of all we get a dose of his infectious good humor and positive outlook.  I’m also thrilled to have my dear friend and old compadre (from KRLD Restaurant Show days) Bud Kennedy in the house this month as our special “Guest Gourmet”.  Bud is the most trusted source for restaurant news in Tarrant County.  His Fort Worth Star-Telegram “Eats Beat” column is the definitive guide to the best dining choices west of the Trinity (and beyond). Join us for an action-packed episode that includes a special “KISS Cooking” segment (keep it simple and straight forward) as Sevy shows you how to cook salmon perfectly.  It’s the program dedicated to introducing you to the people who create the flavors you love, “Wining and Dining with Jim White”.  Watch or listen to all of our episodes on:  VOKAL Media, YouTube, Vimeo, and iTunes.  And, remember.  If anybody asks you what you’re making for dinner…tell ’em reservations!

Life seasoned Sevy’s Style.  Tasty!

Chef Jim "Sevy" Severson and Jim White.

Chef Jim “Sevy” Severson and Jim White.

It’s hard to imagine that the popular restaurant Sevy’s is approaching 20 years in business.  My, how time flies when you’re having fun.  Owner, chef and namesake, Jim Severson joins us for a conversation on this week’s episode.   Sevy shares reflective moments with us about his gameplan to keep the wildly popular restaurant vital and relevant for the next generation.   It’s more than a retrospective of the Dallas restaurant scene, it’s more like a short course in how to chart a course for a life well lived.  “Wining and Dining with Jim White” is the podcast devoted to introducing you to the very best chefs and winemakers.  Subscribe to our program at iTunes, and never miss a course, er, episode.

And, remember, if anybody asks you what you’re making for dinner—tell ‘em reservations.

Valentine’s Treats for the Sweet

And, you know who you are!  Valentine’s is like the Super Bowl of dining for the restaurant industry.  Expect big crowds at all the popular places.  Know that you will need a reservation, and for the best table in the really cool spots, you should have called by now.  But never fear, dear heart, because February 14th is a Monday, the window of opportunity is wider this year.  You may confidently choose a rendezvous with your dearly beloved from Thursday February 11th through Valentine’s.  You might even be so bold as to include Tuesday 2/15 if you can sell it on the basis of your “great wisdom” in wanting to “avoid the crowds” and have an intimate dinner in your favorite restaurant (go for it).  I would event submit that you will gain numerous bonus points for making a Valentine’s reservation, and then “extending the romance” by getting you and your honey tickets to the Savor Dallas Wine and Food Festival on March 18-19.  You can enjoy the major part of the DFW dining scene in one night at the International Grand Tasting.  But first things first.  Here are some Valentine’s wining and dining suggestions that we think will be helpful.
