But that’s just not how the great ones do it. Take Chef Stephan Pyles, for instance. He could have sailed off into the sunset after the success of Routh Street Cafe (or Star Canyon), and still been considered one of the greatest chefs ever. But he has too much passion and energy to rest on his laurels. He continues to find new horizons; ways to evolve and reinvent himself. And, lucky for us. That’s the reason we have Flora Street Cafe in the Dallas Arts District. The latest “10 year plan” from Stephan, and the most sublime dining experience in Dallas. He’s enjoying some projects as a corporate culinary consultant these days, and of course, leaves plenty of time for favorite things, travel and culinary R&D. Stephan Pyles is still the ultimate culinary impresario as he prepares to open his new Flora Street Cafe in Hall Arts in the beautiful Dallas Arts District. Join our conversation as Stephan describes the intimate decor of his new restaurant, waxes nostalgic (for just a minute) about the heady rock star days of the 80’s when he and the “Gang of Five” blazed a new culinary trail that eventually stretched around the world; and he even shares a little dirt from the Star Canyon parade of see and been seen. And, as if opening a grand, new restaurant weren’t enough to keep Stephan busy, he also talks about about another new project he has up his sleeve.

Ride in for some larapin’ grub
Stephan Pyles has the touch. And, once again, Dallas-Fort Worth diners are the lucky recipients of a new restaurant concept from him. Well, actually it’s an old concept. This one dates back to his memories of growing up in Big Spring, Texas, and his family’s Phillips 66 truck stop. Stephan says his new Stampede 66 is his version of a truck stop he would have opened as a kid, if he had taste, control and money. The downtown Dallas destination is open for lunch and dinner. What Are you Making for Dinner? Reservations!
Here’s a good way to begin March: On Tuesday night Stephan Pyles in the Arts District will host a Neal Vineyards wine dinner. Mark Neal will lead guests through each selection of wine paired with a 4-course menu created by Chef Pyles. $125pp. Call Lisa Moore 214-999-1229 x 102 or email lmoore@stephanpyles.com. If you can’t make the dinner, Stephan will be at Savor Dallas on March 19th. First he hosts a great cooking class and full portion wine and food tasting at his restaurant on Saturday March 19th at 11. Seating is very limited for the dinner.
