Ship-shape food and hospitality
Steve DeShazo runs a tight ship. He came by it honestly through his Navy training as a cook. These days, though, instead of overseeing a military mess hall, he’s in charge of the program that trains chefs to prepare cuisine for fine dining rooms at El Centro’s Food and Hospitality Institute. He joins us on “Wining and Dining with Jim White” to talk about the future of the program and to laud some of it’s celebrity chef graduates. He’s got a very interesting story to tell, and you’ll be inspired by his dedication to making this vital program even better. Welcome to the podcast devoted to introducing you to the men and women who create the flavors you love. You can watch or listen to our show on VOKALnow.com, YouTube, Vimeo, or iTunes. And, remember. If anybody asks you what you’re making for dinner…tell ’em reservations.

Covering the “Eats Beat”
Bud Kennedy is one of America’s most talented journalists. We’re lucky he calls Dallas-Fort Worth home. He’s been a star columnist and political reporter for the Fort Worth Star-Telegram for 30 years. His wildly popular (and entertaining) “Eats Beat” column sings the praises far and wide of the Fort Worth and Tarrant County dining scene. It’s a delightful reunion for us as Bud joins me on this week’s “Wining and Dining with Jim White” on VOKALnow.com. For a decade, Bud was a part of my “KRLD Restaurant Show”. He brought us great restaurant tips almost every week. He borrowed a phrase from legendary sports writer Dan Jenkins and brought us one of the most popular features we ever presented on the radio: “The Brown Food Bowl” each Super Bowl Sunday. Mr. Jenkins surmised that the best food in Texas is “either brown or white”-meaning, of course, barbecue, chili, steaks, hamburgers, fried chicken, etc. (brown food), and mashed potatoes, gravy, and Mrs. Baird’s Bread (white food). I’m eternally grateful to Bud for suggesting the idea, and even more so that he co-hosted the “Brown Food Bowl” every year with me, live on 1080 am. Back in the day we took all your calls and suggestions for your favorite brown food. On this week’s show, we’ll talk about some of the old favorites, new favorites, and foods of many colors! Who knows? It might even be the impetus that gets Bud back in the studio with me more often. I sure hope so. And, I hope you enjoy the show. Watch or listen on VOKAL Media, YouTube, Vimeo, or iTunes. And, remember. If anybody asks you what you’re making for dinner…tell ’em reservations!

Jim White welcomes Janice Provost and Bud Kennedy
Parigi is the Italian word for Paris. It’s also a longtime foodie favorite restaurant in Dallas operated by Chef Janice Provost (who just happens to love all things French, and especially Paris). Janice is our guest on this week’s “Wining and Dining with Jim White” on VOKALnow.com. Find out how she put herself in a position to succeed with the restaurant. First, though, she had to learn how to be a chef (El Centro took care of that). Join us for the rest of the story on the program devoted to introducing you to the women and men who create the flavors you love. Bud Kennedy from the Fort Worth Star-Telegram is back with us as “Guest Gourmet”, and he has more tips from his famous “Eats Beat” column. Watch or listen to our show on VOKAL Media, YouTube, Vimeo or iTunes. And, remember. If anybody asks you what you’re making for dinner. Tell ’em, reservations!

Sevy shares the love

Jim White, Jim Severson and Bud Kennedy
Someone once said “If you want to be loved, be lovable.” In the culinary world this adage fits Jim Severson to a tee (since he loves golf). “Sevy” as his friends call him (and I’ve never met anyone who knows him that isn’t his friend), may be the most engaging, friendly, helpful, charming, kind…..well, lovable chef there is. There are reasons beyond great food and service why Sevy’s Grill is bustling with happy guests everyday 20 years after the restaurant opened near Preston Center. We are delighted to welcome Sevy to “Wining and Dining with Jim White” on VOKALnow.com. We get a health update from the popular chef and a look at what’s ahead for him. Most of all we get a dose of his infectious good humor and positive outlook. I’m also thrilled to have my dear friend and old compadre (from KRLD Restaurant Show days) Bud Kennedy in the house this month as our special “Guest Gourmet”. Bud is the most trusted source for restaurant news in Tarrant County. His Fort Worth Star-Telegram “Eats Beat” column is the definitive guide to the best dining choices west of the Trinity (and beyond). Join us for an action-packed episode that includes a special “KISS Cooking” segment (keep it simple and straight forward) as Sevy shows you how to cook salmon perfectly. It’s the program dedicated to introducing you to the people who create the flavors you love, “Wining and Dining with Jim White”.
