Just don’t call me late for dinner

Al Biernat and Jim White

Al Biernat and Jim White

Ever wonder how restaurant proprietor Al Biernat got so good at remembering names of people who come into his establishment?  The answer is here, on today’s episode of “Wining and Dining with Jim White” on VOKALnow.com.  Al and his team are celebrating 20 years of great food and service in Oak Lawn, and the debut of their beautiful new Al Biernat’s North on Spring Valley.  Al gives us his recipe for success in the restaurant business, and takes us back to how he got started.  It’s basically a short master’s course on how to run a great restaurant.  Welcome to the podcast devoted to introducing you to the men and women who make the eats and drinks you love.  You can catch all of our shows on VOKAL Media and on iTunes.  And, remember.  If anybody asks you what you’re making for dinner…tell ’em reservations!

Cornwall on Coit?

Nick Barclay

TAXI

Hail a 1972 London Taxi at “Fish and Fizz”

Storied chef Nick Barclay is back in the Dallas-Fort Worth area and getting ready to satisfy your cravings for fish and chips, bubble ‘n squeak, and lots of other proper British dishes at his new “Fish and Fizz” in Richardson.  He joins us on this week’s episode of “Wining and Dining with Jim White” on VOKALnow.com.  One of our favorite chefs in the 80’s and 90’s, he and his wife Kelly closed Barclay’s and moved the family to Nick’s native Cornwall, in southwest England, at the turn of the Millennium.  They’re excited to be back in the area, and to open their new restaurant sometime in early June.  We caught up with Nick on site to the get the lowdown on what sounds like a great addition to the area dining scene.  He’s aiming to offer you the best fish and chips you ever had, along with a great selection of wines, beers, and ales (the “fizz”).  “Wining and Dining with Jim White” is the podcast devoted to introducing you to the people who create the flavors you love.  Catch all of our podcasts on VOKAL Media and on iTunes.  And, remember…if anybody asks you what you’re making for dinner, tell ’em reservations!

Restaurant icon and urban visionary

Anastacia and Monica

Anastacia Quinones and Monica Greene

Join us for Part 2 of our lively discussion with Monica Greene on “Wining and Dining with Jim White” on VOKALnow.com.  Monica has spent the better part of three decades championing urban Dallas neighborhoods and helping to turn them into restaurant meccas:  Uptown, Oak Lawn, Deep Ellum.  Now, she and her cohorts, Chef Anastacia Quiñones and bartender Leann Berry, collectively known as the “Trifecta” are doing the same for the Cedars Neighborhood with the re-opening of The Cedars Social.  On today’s episode hear Monica’s reflections on some of the amazing chefs and restaurateurs she has worked with through the years, and get a great sense of how the Dallas-Fort Worth restaurant scene has evolved.  “Wining and Dining with Jim White” is the podcast devoted to introducing you to the people who make the eats and drinks you love.  Catch all of our episodes on VOKAL Media and on iTunes.  Remember, if anybody asks you what you’re making for dinner, tell ’em reservations!

Monica is back

Monica and Jim

Monica Greene and Jim White

Iconic restaurateur Monica Greene joins us on this week’s episode of “Wining and Dining with Jim White” on VOKALnow.com.  She was loving her days of semi-retirement in Aspen, when a “funny thing happened on the way up the mountain”.  She had a drink with some old friends and bought the establishment in which they were drinking (don’t try this at home).  Turns out to be a very cool move, because that establishment is The Cedars Social, and Monica and her “trifecta” partners, Chef Anastacia Quiñones, and mixologist Leann Berry,  have just re-opened the fleetingly popular restaurant in Dallas’ Cedars Neighborhood.  They’re serving up “Modern Mexican Cuisine” (don’t bother asking for nachos), and pairing it with a great Tequila/Mezcal and fine wine program.  You’ll hear great stories from Monica about her many restaurant successes–Monica’s Aca y Alla and Ciudad to name but a few–a couple of disappointments along the way, and about her love for Dallas-Fort Worth’s urban neighborhoods (clue:  she’s usually had a restaurant in one of them).  Welcome to the podcast devoted to introducing you to the people who create the eats and drinks you love.  Catch all of our episodes on VOKAL Media and on iTunes.  And, remember…if anybody asks you what you’re making for dinner, tell ’em reservations!

Innovate; respect heritage

Jenna Kunde, Jim White, Jeff Kunde

Jenna Kunde, Jim White and Jeff Kunde

Innovation and heritage are words to live by for Jeff Kunde, chairman of Kunde Family Winery, this week’s guest on “Wining and Dining with Jim White” on VOKALnow.com.  For over a century, Jeff’s family has grown grapes and made wine in Sonoma.  He talks about the importance of sustainability as “an on-going process”, not just a means to an end.  You’ve probably seen the Kunde estate in movies and big time TV commercials (Jeff will refresh your memory).  It’s a beautiful place to visit, and Jeff extends a hearty Kunde Family welcome to you.  He even shares the family’s favorite wine toast with you (a secret ritual that was used in pre World War II Germany to identify undercover Gestapo agents).  Mystery, intrigue, and great wine tasting ahead!  Join us on the podcast devoted to introducing you to the people who make the eats and drinks you love.  Catch all of our episodes on VOKAL and on iTunes.  And, remember:  If anybody asks you what you’re making for dinner….tell ’em reservations!

Magical Mendoza Malbec

Tatiana and Jim

Tatiana Nessier and Jim White

Take a tasting excursion with us to Argentina and meet two of the friendliest wine pros around on this week’s “Wining and Dining with Jim White” on VOKALnow.com.  Sevy’s restaurant was the backdrop as we tasted Mendoza’s nectar of the gods, Malbec from Alamos Wines and Don Miguel Gascon.  Tatiana Nessier may have the best job in the world as a high-flying, fun loving brand ambassador for the high altitude wines of Alamos.  Winemaker Matias Ciciani from Don Miguel Gascon is the third generation of winemakers in his family and literally was born a block away from the winery where he works today!  Find out about the joyous Argentine cultural celebration of wine and foods called Asado, and discover some delicious wines.  It’s on the program devoted to introducing you to the women and men who create the flavors you love.  Check out all our episodes on

Joie de vivre to the max

Jean Charles Boisset and Jim White

Jean-Charles Boisset and Jim White

Jean-Charles Boisset is our guest this week on “Wining and Dining with Jim White” on VOKALnow.com.  He’s a very successful businessman, of course.  Boisset Collection of Fine Wines operates more than two dozen wineries on two continents.  But in my opinion, his real gift is his zest for life and the positive spirit he brings to every encounter and situation. He’s a magician really.  Sprinkling his joie de vivre wherever he goes and conjuring magic out of thin air.  On today’s show find out about his passion for wine, cultivated practically from birth, his “love at first sight” relationship with wife Gina Gallo, and his tireless efforts to create “one world wine” with excellence.  “Wining and Dining with Jim White” is the podcast devoted to introducing you to the people who create the flavors you love.  Catch all of our episodes on iTunes and on VOKAL.  And, remember.  If anybody asks you what you’re making for dinner…tell ’em, reservations!

Savor sublime flavor and hospitality

Charlottesville - Kirsty Harmon Blenheim Vineyards

Kirsty Harmon, Blenheim Vineyards with Jim White

Join us for a quick romp through Virginia wine country in the foothills of the beautiful Blue Ridge Mountains on “Wining and Dining with Jim White” on VOKAL.  We only had two days to visit!  Two weeks or even a lifetime is better when you visit a place as charming and inviting as Charlottesville in Albemarle County Virginia.  There’s more history here than you likely absorbed in your entire formal education (think Thomas Jefferson and James Madison for starters).  For foodies; there’s an amazing wine industry (growing by leaps and bounds); a host of craft brewers; succulent Virginia apples (yummy cider); and plenty of delicious cuisine from Southern comfort food to edgy New American.  We soaked-in as much wine, food and culture as possible.  So, join us for a quick overview on our show today.  Most people we spoke with started making plans to move to Charlottesville within a short time of discovering all the area offers.  Locals would never dream of moving.   Tour Jefferson’s Monticello and meet the man who is considered the father of the Virginia wine industry.  Get a taste of classic 18th Century cooking at

historic Michie Tavern.  And, hopscotch with us throughout Albemarle County to taste wines at Jefferson Vineyards, Blenheim Vineyards (Dave Matthews fans you’ll love hearing about his winery), the winery with the Presidential seal of approval (and ours) that makes some delicious sparkling wine, and more!  It’s food, wine, history, hospitality, and more.   And, like we say, if anybody asks you what you’re making for dinner, especially in Virginia, tell ’em reservations!

Here’s a quick rundown of more places we visited so you can get information:
